Minestrone was born in peasant kitchens, where nothing was wasted and everything had purpose. Each pot told the story of the season, the region, and the household. This is the soup that simmered on the stove all day while people worked the fields, returned home, and gathered at the table.

Today, we’re making a classical minestrone—not fixed to a region, but faithful to the philosophy.
